With almost 800 years of winemaking tradition, Domäne Castell is one of the oldest German wineries. The gypsum keuper soil that predominates in the eastern Franconian growing region is very rich in nutrients and gives the wines their flavor.

The Haas distillery in Pretzfeld produces its brandies exclusively in small copper stills using a particularly slow and gentle distillation process. Johann Guggenbichler distillery

The Johann Guggenbichler distillery from Frasdorf in Chiemgau has been handcrafting precious brandies since 1829. Only fully ripe and hand-picked fruit is suitable for production. When processed intact, the fruit develops an unadulterated aroma and a harmonious taste in the respective fruit variety. To try at the Pschorr at Viktualienmarkt.

Hacker-Pschorr Bräu GmbH

The Pschorr at Viktualienmarkt is named after the brewer Joseph Pschorr. That's why the brewery's classic beer, Hacker-Pschorr Edelhell, bubbles out of the pub's wooden barrels. The other beer specialties also come from the Munich brewery. Guests at the Pschorr can choose between wheat beer, Sternweiße, Leichte Weiße, Dunkel and Pils.

Freiherr von Perger GmbH

Perger has been producing juices without artificial flavors and additives for more than 60 years. The company from Breitbrunn am Ammersee also supplies Pschorr with organic juices made from regional as well as exotic and fair-trade fruit varieties. The natural and aromatic taste of the juices is created solely through the careful and gentle processing of the high-quality fruit.

We are proud to work with Georg Schlickenrieder from Otterfing. His handcrafted schnapps enrich our range with incomparable taste experiences. Every drop testifies to his craftsmanship and gives our restaurant a special touch of quality and refinement The Murnau-Werdenfelser Privatwirt, our long-standing partner, supplies us with high-quality organic beef. This collaboration not only guarantees quality on the plate, but also an ethically responsible culinary experience that we are proud of.

Bioteaque from Traunstein has been producing high-quality organic teas with names such as "Schwarza Bene" and "Schene Leni" for 15 years, primarily for the top gastronomy and hotel industry. The tea bags are filled by hand in Chiemgau. The blends contain only organic leaves and blends with large pieces of fruit and berries. There's always a selection to try at Pschorr.

Hunter Karl Schmid

Garmisch-Partenkirchen hunts in its hunting ground near Schlehdorf, directly on Lake Kochelsee. He loves nature and is passionate about roe deer, red deer and chamois in the mountains above his community. Out of respect for the animals, he does not hunt them in driven hunts, driven hunts or enclosures, but exclusively in stress-free stand and stalking hunts. This is the only way to avoid an increased release of hormones, which is essential for the quality of our game meat. With a low fat content of two percent, game meat is very lean and therefore extremely healthy.
Franz Bader pasture community Ohlstadt
Most of the sheep live above the municipality of Ohlstadt in the district of Garmisch- Partenkirchen on alpine pastures in the Estergebirge. The breed is characterized by great physical endurance and enormous resistance to extreme weather in the mountains. Strong legs with hard claws ensure climbing and sure-footedness, even in areas with high levels of precipitation. The sheep have lived on the pastures for centuries, making a major contribution to the preservation of Bavaria's native cultural landscape. You can enjoy our local lamb dishes both in early winter and around Easter.
Poultry farm Lugeder family
The Lugeder family's poultry farm is located in the Upper Bavarian hills near Pleiskirchen and has been run with passion for three generations. Geese, ducks and flying ducks live here in spacious open stables and on extensive meadows. Only the farm's own grain is fed. The kitchen team focuses on the highest quality, so that the regional products convince with the best taste. The beer from ice-cold wooden barrels goes perfectly with this - a real rarity.
Aischgründer carp
The Aischgrund is one of the most famous pond landscapes in Germany. The carp that lives here has been the typical specialty of this region for over 1000 years. The fish's diet consists of natural food, which they find in the ponds themselves. The carp is offered seasonally on our daily menu and prepared by our kitchen team in various creative variations.
Asparagus from the Raba family
The Raba asparagus farm is a genuine family business. Asparagus has been grown on the farm since the 1960s. The sandy soils are ideal for growing juicy asparagus with particularly tender spears.

Chicken farm Bacher Meinrad

The Bacher family farm is located in the Kleinhartpenning district, 5 km south of Holzkirchen. They have been successfully keeping laying hens in barns for two decades. The chickens have access to a winter garden with straw, which allows them to scratch outside in all weathers. The hens are fed exclusively with GMO-free feed and their eggs are subject to strict, ongoing quality controls.
Producer association BayernOX
We have been working successfully with the Weilheim producers' association for a long time. The aim of the BayernOX initiative is to source beef directly from the local area and without middlemen. In cooperation with the farmers around Weilheim, the local beef is marketed as a premium product in the catering trade. The meat is slaughtered at the district slaughterhouse in Garmisch-Partenkirchen and in Fürstenfeldbruck. The meat is cut by our partner Markus Ponholzer in Antdorf.

Organic goat farm Johannes Egger

Johannes Egger manages an organic goat farm with around 80 goats near Kempten with a well thought-out concept. The goats are fed exclusively on grass and hay, and the fresh milk is processed directly on site in the farm's own dairy. Johannes focuses on quality and organic conviction, and his farm is subject to regular inspections to ensure compliance with the EC Organic Regulation and Bioland Association guidelines.

We are grateful for the many years of cooperation with Markus Ponholzer and his team, who support us in his specialized butchery in Antdorf with cutting, packaging and production, especially in the area of beef cutting. Burgis dumplings Upper Palatinate

It's a love that you can taste - the love of dumplings. This passion is reflected in every one of our dumplings. We have maintained a close partnership with Timo Burger and his team from the Upper Palatinate since 2012. The potatoes used are sourced exclusively from Bavaria.
Fine brandies from Frasdorf in the foothills of the Chiemgau Alps
The farm of distiller Johann Guggenbichler is surrounded by lush orchards. Only hand-picked, fully ripe fruit, ripened on the gentle hills of the Chiemgau mountains, develops an unadulterated aroma and forms the most important basis of the fine brandies.

Unser Wirtshaus liegt direkt im Herzen Münchens am Viktualienmarkt, dem bekannten Dreh- und Angelpunkt in der Münchner Altstadt. Es ist der beliebte Treffpunkt für alle Freunde der bayerischen Wirtshauskultur. Das Küchenteam stellt sich hohen Ansprüchen – schmecken, sehen und riechen Sie, welche Qualität und welcher Geschmack in regionalen Produkten stecken. Das Bier aus stangeneisgekühlten Holzfässern ist nicht nur eine Rarität, sondern sorgt für Frische und Aromatik bis zum letzten Schluck.
First8 Manufaktur
Der Bio-Kombucha im Pschorr hat einen kurzen Weg hinter sich. Produziert wird er vom Start-up First8 in München, das direkt nebenan am Viktualienmarkt auch ein Standl betreibt. Seit 2021 fermentiert das Unternehmen aus hochwertigen Bio-Zutaten und gesunden Kulturen hochwertigen Kombucha, dessen Alkoholgehalt garantiert unter 0,5 Prozent liegt. Der Hersteller selbst spricht vom Champagner unter den alkoholfreien Getränken.

Murnau-Werdenfels cattle

Our Murnau-Werdenfels cattle find their home in the picturesque landscape of the Alpine foothills around Garmisch-Partenkirchen, Mittenwald, Oberammergau and the Murnauer Moos. This environment shapes their unique character with high vitality and adaptability, characteristics that you will find in our dishes. We rely on the species-appropriate rearing of our cattle, exclusively by farmers from the region, who carry out their responsible task with care and, above all, a great deal of patience. One outstanding example is the Arche-Hof in Otterfing, south of Munich. The focus here is on the passion for breeding and keeping old, endangered domestic animal breeds
